Description
A quick and healthy soup perfect for Thanksgiving, packed with zucchini and spinach.
Ingredients
- 2 medium zucchinis, chopped
- 2 cups fresh spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add zucchini and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, add spinach, and simmer for 10 minutes.
- Season with salt and pepper.
- Blend until smooth if desired.
