Description
A refreshing and healthy cold soup perfect for Thanksgiving. Packed with shrimp and avocado, it’s light yet satisfying.
Ingredients
- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cucumber, peeled and chopped
- 1 cup plain Greek yogurt
- 2 cups vegetable broth
- 1 lime, juiced
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a blender, combine avocado, cucumber, yogurt, vegetable broth, lime juice, garlic, and olive oil.
- Blend until smooth.
- Season with salt and pepper.
- Pour into bowls and top with cooked shrimp.
- Garnish with fresh cilantro.
- Chill for at least 30 minutes before serving.

- For a spicier version, add a dash of hot sauce.
- Use fresh shrimp for the best flavor.
