Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cucumber, peeled and chopped
  • 1 cup plain Greek yogurt
  • 2 cups vegetable broth
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a blender, combine avocado, cucumber, yogurt, vegetable broth, lime juice, garlic, and olive oil.
  2. Blend until smooth.
  3. Season with salt and pepper.
  4. Pour into bowls and top with cooked shrimp.
