Ingredients
- 1 package (9 oz) cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup pepperoni, sliced
- 1/2 cup mozzarella cheese, cubed
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook tortellini according to package instructions. Drain and cool.
- In a large bowl, combine tortellini, cherry tomatoes, cucumber, red onion, black olives, pepperoni, and mozzarella.
- In a small bowl, whisk olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour dressing over the salad and toss to coat.
- Serve chilled.

- For a vegetarian option, omit the pepperoni.
- Add fresh basil for extra flavor.
- Store leftovers in the fridge for up to 2 days.
