Ingredients

  • 1 package (9 oz) cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup pepperoni, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook tortellini according to package instructions. Drain and cool.
  2. In a large bowl, combine tortellini, cherry tomatoes, cucumber, red onion, black olives, pepperoni, and mozzarella.
  3. In a small bowl, whisk olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
