Description
A moist and flavorful banana bread with tropical Hawaiian flavors.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking soda, and salt.
- In another bowl, beat butter and sugar until creamy. Add eggs one at a time.
- Mix in mashed bananas, pineapple, coconut, and vanilla.
- Gradually add dry ingredients to wet ingredients. Stir until combined.
- Pour batter into the loaf pan. Bake for 60-65 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use very ripe bananas for best flavor.
- Drain pineapple well to avoid excess moisture.
- Store in an airtight container for up to 3 days.
