Description
A simple chicken soup recipe that requires no added water, using only natural juices for rich flavor
Ingredients
- 1 whole chicken (3-4 lbs)
- 4 carrots, chopped
- 3 celery stalks, chopped
- 1 large onion, diced
- 4 garlic cloves, minced
- 1 tbsp salt
- 1 tsp black pepper
- 2 bay leaves
- 1 tsp dried thyme
Instructions
- Place chicken in large pot
- Add vegetables around chicken
- Season with salt, pepper, bay leaves, and thyme
- Cover and cook on low heat for 2 hours
- Remove chicken, shred meat, and return to pot
- Discard bones and bay leaves before serving
Notes
- Chicken releases enough liquid during cooking
- Use organic chicken for best results
- Skim fat from surface if desired
