Description
A quick and easy walking taco casserole layered with seasoned ground beef, cheese, and crunchy Doritos.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 cups shredded cheddar cheese
- 1 bag Doritos (nacho cheese flavor)
- 1 cup sour cream
- 1/2 cup salsa
- 1/4 cup sliced olives
Instructions
- Preheat oven to 350°F.
- Brown ground beef in a skillet over medium heat.
- Drain excess fat and stir½ in taco seasoning according to packet instructions.
- Add black beans, corn, onions, and bell peppers. Cook for 3–5 minutes.
- Crush half the Doritos and layer them in a greased baking dish.
- Spread the beef mixture over the Doritos.
- Sprinkle shredded cheese evenly.
- Top with remaining crushed Doritos.
- Bake for 15–20 minutes until cheese melts.
- Serve with sour cream, salsa, and olives.

- Use any Doritos flavor you prefer.
- Substitute ground turkey for a lighter option.
- Top with lettuce and tomatoes after baking for freshness.
- Store leftovers in an airtight container for up to 3 days.
