Ingredients
- 1 cup wild rice, uncooked
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 16 oz mushrooms, sliced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions
- Preheat oven to 375°F (190°C).
- Rinse wild rice and cook in vegetable broth according to package instructions.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until softened.
- Add mushrooms, thyme, rosemary, salt, and pepper. Cook until mushrooms release moisture and brown slightly.
- Combine cooked wild rice and mushroom mixture in a large bowl.
- Transfer to a greased baking dish and sprinkle with Parmesan cheese and breadcrumbs.
- Bake for 20-25 minutes, until golden and bubbly.
Notes
- Use a mix of wild and brown rice for a different texture.
- Substitute chicken broth if not vegetarian.
- Add spinach or kale for extra greens.
