Description
A refreshing Italian pasta salad perfect for picnics or light meals.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red onion, diced
- 1/2 cup cucumber, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions.
- Drain pasta and rinse under cold water.
- In a large bowl, combine cooled pasta with tomatoes, olives, red onion, cucumber, and basil.
- Pour Italian dressing over salad and mix well.
- Sprinkle Parmesan cheese on top.
- Season with salt and pepper.
- Toss gently before serving.
Notes
- Chill pasta salad for 30 minutes before serving.
- Add grilled chicken for extra protein.
- Store leftovers in an airtight container for up to 3 days.
