Ingredients
- 4 cups broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp flour
- 2 cups milk
- 2 cups chicken broth
- 2 cups shredded cheddar cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, cook until soft (3 minutes).
- Stir in flour to make a roux.
- Gradually whisk in milk and broth.
- Add broccoli and simmer for 15 minutes.
- Use an immersion blender to partially puree.
- Stir in cheese until melted.
- Season with salt and pepper.
