Description

A quick and flavorful one-pan meal combining tender chicken, rice, cheese, and taco seasoning.


Ingredients

  • 1 lb boneless chicken breast, diced
  • 1 cup uncooked white rice
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • Salt to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until no longer pink.
  3. Stir in onions and garlic, cook for 2 minutes.
  4. Add rice, taco seasoning, and chicken broth. Bring to boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Remove from heat, stir in diced tomatoes.
  7. Sprinkle cheese on top, cover until melted.
  8. Serve warm.
