Description
A simple and nutritious cabbage and potato soup perfect for meal prep.
Ingredients
- 1 medium cabbage, chopped
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups water
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté for 2 minutes.
- Add carrots and potatoes, cook for 5 minutes.
- Pour in vegetable broth and water.
- Add chopped cabbage, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Check that potatoes are tender before serving.
Notes
- Store in airtight containers for up to 5 days.
- Freezes well for up to 3 months.
