A rich and savory soup combining tender short ribs with caramelized onions, perfect for a hearty meal.
Ingredients
- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 4 slices French bread
- 1 cup shredded Gruyère cheese
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Add garlic and cook for 1 minute.
- Season short ribs with salt and pepper, then brown in the pot.
- Pour in red wine and scrape the bottom of the pot.
- Add beef broth, thyme, and bay leaf. Simmer for 2 hours.
- Remove short ribs, shred the meat, and return to the pot.
- Toast French bread slices.
- Ladle soup into bowls, top with bread and Gruyère cheese.
- Broil until cheese melts and bubbles.

- Use a dry red wine like Cabernet Sauvignon.
- Skim fat from the broth for a lighter soup.
