Ingredients

  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 4 slices French bread
  • 1 cup shredded Gruyère cheese


Instructions

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onions and cook until caramelized, about 20 minutes.
  3. Add garlic and cook for 1 minute.
  4. Season short ribs with salt and pepper, then brown in the pot.
  5. Pour in red wine and scrape the bottom of the pot.
  6. Add beef broth, thyme, and bay leaf. Simmer for 2 hours.
  7. Remove short ribs, shred the meat, and return to the pot.
  8. Toast French bread slices.
  9. Ladle soup into bowls, top with bread and Gruyère cheese.
  10. Broil until cheese melts and bubbles.
