Description

Ingredients
- 2 cups fresh broccoli florets
- 1 cup low-sodium vegetable broth
- 1/2 cup crumbled feta cheese
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a pot over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Add broccoli florets and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 3 minutes until broccoli is tender.
- Blend the mixture until smooth using an immersion blender.
- Stir in crumbled feta cheese and black pepper.
- Serve warm.
