Healthy Air Fryer Blueberry Muffins are a quick and nutritious treat. They are easy to make and perfect for breakfast or a snack.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup almond milk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix the flour, oats, baking powder, baking soda, and salt.
- In another bowl, combine the applesauce, honey, and almond milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the blueberries gently.
- Line the air fryer basket with parchment paper.
- Scoop the batter into the basket, filling each cup about 2/3 full.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Let them cool for a few minutes before serving.
Notes
- Store leftovers in an airtight container.
- Feel free to substitute other fruits.
