Ingredients
- 2 large eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup black beans, drained and rinsed
- 1/4 cup shredded cheese
- 1 whole wheat tortilla
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F for 3 minutes.
- In a bowl, whisk the eggs and season with salt and pepper.
- Heat olive oil in a pan over medium heat and sauté onions and bell peppers for 2 minutes.
- Add the eggs to the pan and scramble until fully cooked.
- Warm the tortilla in the air fryer for 30 seconds.
- Layer the scrambled eggs, black beans, and cheese on the tortilla.
- Roll the tortilla tightly into a burrito.
- Place the burrito in the air fryer and cook for 5 minutes, flipping halfway.
- Serve hot.
