Ingredients

  • 2 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup shredded cheese
  • 1 whole wheat tortilla
  • 1 tsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 350°F for 3 minutes.
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Heat olive oil in a pan over medium heat and sauté onions and bell peppers for 2 minutes.
  4. Add the eggs to the pan and scramble until fully cooked.
  5. Warm the tortilla in the air fryer for 30 seconds.
  6. Layer the scrambled eggs, black beans, and cheese on the tortilla.
  7. Roll the tortilla tightly into a burrito.
