Description
A healthy and delicious zucchini bread made in an air fryer for a quick and easy treat.
Ingredients
- 1 cup grated zucchini
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your air fryer to 320°F (160°C).
- Mix grated zucchini, egg, and honey in a bowl.
- Add whole wheat flour, almond flour, baking powder, cinnamon, and salt. Stir until combined.
- Fold in chopped walnuts if using.
- Pour the batter into a greased loaf pan that fits your air fryer.
- Place the pan in the air fryer and cook for 25-30 minutes, or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Squeeze excess water from the zucchini before mixing.
- Adjust sweetness by adding more or less honey.
- Store leftovers in an airtight container for up to 3 days.
