Description

A healthy and delicious zucchini bread made in an air fryer for a quick and easy treat.


Ingredients

  • 1 cup grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Mix grated zucchini, egg, and honey in a bowl.
  3. Add whole wheat flour, almond flour, baking powder, cinnamon, and salt. Stir until combined.
  4. Fold in chopped walnuts if using.
  5. Pour the batter into a greased loaf pan that fits your air fryer.
  6. Place the pan in the air fryer and cook for 25-30 minutes, or until a toothpick comes out clean.
  7. Let it cool before slicing.

Notes

  • Squeeze excess water from the zucchini before mixing.
  • Adjust sweetness by adding more or less honey.
  • Store leftovers in an airtight container for up to 3 days.
