A simple and healthy avocado egg salad packed with protein and healthy fats.
Ingredients
- 2 ripe avocados
- 4 large hard-boiled eggs
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Peel and chop the hard-boiled eggs.
- Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
- Add lemon juice and mash the avocados slightly.
- Fold in the chopped eggs, dill, salt, and pepper.
- Mix gently and serve fresh.
Notes
- Use ripe avocados for better texture.
- Add more lemon juice if needed to prevent browning.
