Ingredients

  • 2 medium zucchinis, sliced into fries
  • 1/2 cup breadcrumbs (or almond flour for gluten-free)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray or olive oil


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut zucchinis into fry-shaped strips.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
