Ingredients
- 1 cup cooked quinoa
- 1 grilled chicken breast, sliced
- 1/2 cup shredded red cabbage
- 1/4 cup diced cucumber
- 1/4 cup diced tomato
- 2 tbsp BBQ ranch dressing
- 1 tbsp chopped fresh cilantro
- 1 tsp lime juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let it cool.
- Season chicken breast with salt and pepper, then grill until fully cooked.
- Slice grilled chicken into thin strips.
- In a bowl, layer cooked quinoa, sliced chicken, red cabbage, cucumber, and tomato.
- Drizzle with BBQ ranch dressing and lime juice.
