Ingredients
- 1 can black beans, rinsed and drained
- 1 cup shredded reduced-fat cheese
- 4 whole wheat tortillas
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1 tsp cumin
- 1/2 tsp chili powder
Instructions
- Combine beans, corn, onion, cumin, and chili powder in a bowl.
- Divide the mixture evenly among the tortillas.
- Sprinkle cheese on top of each.
- Fold the sides of each tortilla inward and roll tightly.
- Wrap each burrito in foil and freeze for up to 3 months.
Notes
- Reheat in the microwave for 2 minutes or in the oven at 350°F for 15 minutes.
- Add salsa or Greek yogurt when serving.
