Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 lb beef sirloin, sliced
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 green onions, chopped
  • Salt to taste


Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add beef, garlic, and soy sauce. Cook until beef is browned.
  6. Add bell pepper and broccoli. Sauté until vegetables are tender.
  7. Fluff quinoa with a fork and season with salt.
  8. Serve beef mixture over quinoa and garnish with green onions.
