Ingredients
- 1 cup quinoa
- 2 cups water
- 1 lb beef sirloin, sliced
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 2 green onions, chopped
- Salt to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add beef, garlic, and soy sauce. Cook until beef is browned.
- Add bell pepper and broccoli. Sauté until vegetables are tender.
- Fluff quinoa with a fork and season with salt.
- Serve beef mixture over quinoa and garnish with green onions.

- Adjust the soy sauce amount for taste.
- Substitute beef with chicken or tofu for a different flavor.
