Description
A fresh and vibrant salad combining roasted beets, creamy burrata, and a simple vinaigrette.
Ingredients
- 4 medium beets, peeled and quartered
- 1 ball burrata cheese (about 8 oz)
- 2 cups arugula
- 1/4 cup walnuts, toasted
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss beets with 1 tbsp olive oil, salt, and pepper. Roast for 30-35 minutes until tender.
- Whisk remaining olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
- Arrange arugula on a plate, top with roasted beets.
- Tear burrata into pieces and place on top.
- Sprinkle toasted walnuts over the salad.
- Drizzle with dressing and serve immediately.

- Use golden beets for a sweeter flavor.
- Replace walnuts with pecans if preferred.
