A fresh and vibrant salad combining roasted beets, creamy burrata, and a simple vinaigrette.


Ingredients

  • 4 medium beets, peeled and quartered
  • 1 ball burrata cheese (about 8 oz)
  • 2 cups arugula
  • 1/4 cup walnuts, toasted
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss beets with 1 tbsp olive oil, salt, and pepper. Roast for 30-35 minutes until tender.
  3. Whisk remaining olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  4. Arrange arugula on a plate, top with roasted beets.
  5. Tear burrata into pieces and place on top.
  6. Sprinkle toasted walnuts over the salad.
  7. Drizzle with dressing and serve immediately.
