Description
A hearty and healthy Belgian-style beef stew slow-cooked to perfection with tender meat and fresh vegetables.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth (low sodium)
- 1 cup dark beer (optional)
- 2 bay leaves
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp whole wheat flour
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onions, carrots, and celery to the pot. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over the vegetables and mix well.
- Pour in beef broth and beer, stirring to combine.
- Return the beef to the pot. Add bay leaves, thyme, and rosemary.
- Cover and simmer on low heat for 2.5–3 hours until meat is tender.
- Season with salt and pepper before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 10 minutes.
- Omit beer if preferred and replace with extra broth.
- Serve with crusty whole-grain bread.
