Description
Flavorful vegetarian tacos with crispy buffalo cauliflower as the main filling. A healthier alternative to traditional chicken wings.
Ingredients
- 1 head cauliflower (cut into florets)
- 1/2 cup hot sauce
- 2 tbsp melted butter
- 1 tsp garlic powder
- 1/2 tsp salt
- 6 small corn tortillas
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped cilantro
- 2 tbsp sour cream
Instructions
- Preheat oven to 425°F (220°C).
- Toss cauliflower with hot sauce, butter, garlic powder and salt.
- Spread on baking sheet and roast for 25 minutes until crispy.
- Warm tortillas in dry skillet for 30 seconds per side.
- Assemble tacos with cauliflower, lettuce, tomatoes, cheese and cilantro.
- Drizzle with sour cream before serving.
Notes
- Adjust hot sauce amount to taste
- For vegan version: use oil instead of butter and skip cheese/sour cream
- Best served immediately
