Description
A simple and healthy cabbage and potato soup perfect for meal prep. It’s nutritious, filling, and easy to make.
Ingredients
- 1 medium cabbage, chopped
- 3 large potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add carrots and potatoes, cook for 5 minutes.
- Stir in cabbage, salt, pepper, thyme, and bay leaf.
- Pour in vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes until vegetables are tender.
- Remove bay leaf before serving.
Notes
- Store leftovers in airtight containers for up to 4 days.
- Add a splash of lemon juice for extra flavor.
- Top with fresh parsley before serving if desired.
