Ingredients
- 1 lb boneless skinless chicken breasts
- 1 cup brown rice
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup black beans, drained
- 1 cup corn kernels
- 1 avocado, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook brown rice according to package instructions.
- Cut chicken into bite-sized pieces. Season with chili powder, cumin, garlic powder, salt, and black pepper.
- Heat olive oil in a pan over medium heat. Cook chicken for 6-8 minutes until no longer pink.
- Dice bell pepper and red onion.
- Assemble bowls with rice, chicken, black beans, corn, bell pepper, onion, and avocado.
- Squeeze lime juice over each bowl and sprinkle with cilantro.

- Use pre-cooked chicken to save time.
- Swap brown rice for quinoa or cauliflower rice.
