Ingredients
- 2 cups cooked chickpeas
- 1/4 cup mayonnaise

- 1/2 cup diced celery
- 1/4 cup diced red onion

- 1/4 tsp black pepper
- 4 slices whole wheat bread
- 1 cup lettuce
Instructions
- Mash chickpeas in a bowl.
- Add mayonnaise, mustard, celery, red onion, lemon juice, salt, and pepper. Mix well.
- Spread the chickpea mixture on two slices of bread.
- Top with lettuce and the remaining bread slices.
- Wrap sandwiches tightly and refrigerate for up to 4 days.
