Description
A refreshing and nutritious chilled spring pea soup with a hint of mint.
Ingredients
- 2 cups fresh peas
- 1 cup vegetable broth
- 1/2 cup fresh mint leaves
- 1/4 cup Greek yogurt
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a pot, combine peas and vegetable broth.
- Bring to a boil, then simmer for 5 minutes.
- Remove from heat and let cool slightly.
- Add mint leaves and olive oil to the pot.
- Puree the mixture using a blender until smooth.
- Stir in Greek yogurt and season with salt and pepper.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Serve with additional mint leaves for garnish.
- This soup can be made a day in advance.
- Add lemon juice for extra flavor if desired.
