Description

A refreshing and nutritious chilled spring pea soup with a hint of mint.


Ingredients

  • 2 cups fresh peas
  • 1 cup vegetable broth
  • 1/2 cup fresh mint leaves
  • 1/4 cup Greek yogurt
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a pot, combine peas and vegetable broth.
  2. Bring to a boil, then simmer for 5 minutes.
  3. Remove from heat and let cool slightly.
  4. Add mint leaves and olive oil to the pot.
  5. Puree the mixture using a blender until smooth.
  6. Stir in Greek yogurt and season with salt and pepper.
  7. Chill in the refrigerator for at least 1 hour before serving.

Notes
