Description
A healthy and flavorful black bean dip inspired by Chipotle’s flavors.
Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/4 cup diced red onion
- 1 clove garlic, minced
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 2 tbsp chopped fresh cilantro
- 1 tbsp olive oil
- 2 tbsp water (optional, for consistency)
Instructions
- In a food processor, combine black beans, red onion, garlic, lime juice, cumin, smoked paprika, and salt.
- Pulse until ingredients are well blended but still slightly chunky.
- Add cilantro and olive oil, then pulse a few more times to incorporate.
- If the dip is too thick, add water 1 tbsp at a time until desired consistency is reached.
- Transfer to a bowl and serve immediately or refrigerate for up to 3 days.
Notes
- For a smoother dip, blend longer.
- Adjust spices to taste.
- Serve with tortilla chips, veggies, or as a spread.
