Description

A healthy and flavorful black bean dip inspired by Chipotle’s flavors.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1 clove garlic, minced
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp olive oil
  • 2 tbsp water (optional, for consistency)


Instructions

  1. In a food processor, combine black beans, red onion, garlic, lime juice, cumin, smoked paprika, and salt.
  2. Pulse until ingredients are well blended but still slightly chunky.
  3. Add cilantro and olive oil, then pulse a few more times to incorporate.
  4. If the dip is too thick, add water 1 tbsp at a time until desired consistency is reached.
  5. Transfer to a bowl and serve immediately or refrigerate for up to 3 days.
