Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp chipotle powder
- 1 lime, juiced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 whole wheat tortillas
- 1 cup cooked brown rice
- 1/2 cup black beans, drained
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup plain Greek yogurt
Instructions
- Marinate chicken with olive oil, chipotle powder, lime juice, salt, and pepper for 30 minutes.
- Grill chicken for 6-7 minutes per side until cooked through.
- Slice chicken into thin strips.
- Warm tortillas on a dry skillet for 30 seconds each side.
- Layer rice, beans, tomatoes, chicken, and cilantro on each tortilla.
- Drizzle with Greek yogurt.
- Fold sides of tortilla inward and roll tightly.
