A refreshing and healthy salad with crisp cucumbers, zesty lime, and fresh cilantro.
Ingredients
- 2 large cucumbers, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Wash and thinly slice the cucumbers.
- Chop the cilantro finely.
- In a large bowl, combine cucumbers, cilantro, lime juice, olive oil, salt, and black pepper.
- Toss gently until evenly coated.
- Sprinkle red pepper flakes if desired.
- Serve chilled.
Notes
- For extra crunch, add diced red onion.
- Best served fresh but can be refrigerated for up to 2 hours.
