Description

Ingredients

  • 2 tbsp olive oil
  • 1 large leek, sliced
  • 2 cloves garlic, minced
  • 4 cups potatoes, diced
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 cup milk (or plant-based milk)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add leeks and garlic, sauté until soft.
  3. Add potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in kale and cook until wilted.
