Description
A creamy and comforting soup inspired by the traditional Irish dish, colcannon. Packed with potatoes, kale, and leeks, this soup is both nutritious and delicious.
Ingredients
- 2 tbsp olive oil
- 1 large leek, sliced
- 2 cloves garlic, minced
- 4 cups potatoes, diced
- 4 cups vegetable broth
- 2 cups kale, chopped
- 1 cup milk (or plant-based milk)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add leeks and garlic, sauté until soft.
- Add potatoes and vegetable broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in kale and cook until wilted.
- Blend half the soup until smooth, then return to the pot.
- Stir in milk, season with salt and pepper.
- Serve warm.

- Use starchy potatoes for a creamier texture.
- Substitute kale with spinach if preferred.
