Description
A creamy and healthy take on classic alfredo with cabbage.
Ingredients
- 1 medium head of cabbage, chopped
- 1 cup of cashews, soaked
- 1 cup of vegetable broth
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of nutritional yeast
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add chopped cabbage and cook until tender.
- Blend soaked cashews with vegetable broth and nutritional yeast until smooth.
- Pour the cashew sauce over the cooked cabbage.
- Mix well and season with salt and pepper.
- Serve warm or store for meal prep.
Notes
- Can be served with whole grain pasta.
- Store in an airtight container in the fridge for up to 5 days.
