Description

A creamy and healthy take on classic alfredo with cabbage.


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 cup of cashews, soaked
  • 1 cup of vegetable broth
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of nutritional yeast
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add chopped cabbage and cook until tender.
  4. Blend soaked cashews with vegetable broth and nutritional yeast until smooth.
  5. Pour the cashew sauce over the cooked cabbage.
  6. Mix well and season with salt and pepper.
  7. Serve warm or store for meal prep.
