Description
A delicious and healthy chicken sandwich with creamy sauce and sun-dried tomatoes.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 whole wheat buns
- 1 cup baby spinach
Instructions
- Season chicken with garlic powder, basil, salt, and pepper.
- Heat olive oil in a pan over medium heat and cook chicken for 6-7 minutes per side until done.
- Slice chicken into strips.
- Mix Greek yogurt with chopped sun-dried tomatoes.
- Toast whole wheat buns lightly.
- Spread yogurt mixture on buns, add chicken strips, and top with baby spinach.
- Serve immediately.
Notes
- Use plain Greek yogurt for a thicker sauce.
- Replace sun-dried tomatoes with roasted red peppers if needed.
- Store leftovers in an airtight container for up to 2 days.
