Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 whole wheat buns
  • 1 cup baby spinach


Instructions

  1. Season chicken with garlic powder, basil, salt, and pepper.
  2. Heat olive oil in a pan over medium heat and cook chicken for 6-7 minutes per side until done.
  3. Slice chicken into strips.
  4. Mix Greek yogurt with chopped sun-dried tomatoes.
  5. Toast whole wheat buns lightly.
  6. Spread yogurt mixture on buns, add chicken strips, and top with baby spinach.
  7. Serve immediately.
