A creamy and healthy twist on the classic Reuben sandwich, transformed into a delicious soup.
Ingredients
- 2 cups low-sodium vegetable broth
- 1 cup diced cooked turkey breast
- 1 cup shredded Swiss cheese
- 1/2 cup sauerkraut, drained
- 1/4 cup low-fat cream cheese
- 1 tbsp olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 tsp caraway seeds
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in turkey, broth, caraway seeds, and black pepper.
- Simmer for 10 minutes.
- Add cream cheese and Swiss cheese, stir until melted.
- Fold in sauerkraut and heat through.
- Serve hot.

- Use low-fat cheese to keep it healthy.
- Drain sauerkraut well to avoid excess liquid.
- For vegetarian option, omit turkey and add extra mushrooms.
