Description
A rich and creamy vegan asparagus soup without any cream. This healthy soup is perfect for a light meal.
Ingredients
- 1 lb asparagus, trimmed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add asparagus and vegetable broth, bring to a boil.
- Reduce heat and simmer until asparagus is tender.
- Blend the soup until smooth.
- Stir in coconut milk and heat through.
- Season with salt and pepper.
- Serve warm.
