A simple and healthy recipe for crispy baked zucchini fries coated with parmesan.
Ingredients
- 2 medium zucchinis
- 1/2 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs
- 1 tbsp olive oil
Instructions
- Preheat oven to 425°F (220°C).
- Cut zucchinis into fry-shaped pieces.
- Mix parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper in a bowl.
- Beat eggs in a separate bowl.
- Dip zucchini pieces in egg, then coat with breadcrumb mixture.
- Place on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 20-25 minutes until golden and crispy.
- Serve immediately.
