Description
A nutritious and hearty beef stew made in a crockpot with sweet potatoes.
Ingredients
- 2 pounds beef stew meat, cubed
- 2 medium sweet potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the beef stew meat on all sides.
- Add the browned beef to the crockpot.
- Add sweet potatoes, carrots, onion, and garlic to the crockpot.
- Pour in beef broth.
- Season with thyme, paprika, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
