Description

A healthy and flavorful turkey bolognese made in the crockpot for an easy, hands-off meal.


Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 bay leaf


Instructions

  1. Brown the ground turkey in a skillet over medium heat until fully cooked.
  2. Add the onion, carrots, celery, and garlic to the skillet. Cook for 5 minutes until softened.
  3. Transfer the turkey and vegetables to the crockpot.
  4. Add the crushed tomatoes, tomato paste, chicken broth, oregano, basil, salt, pepper, and bay leaf. Stir well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove the bay leaf before serving.
  7. Serve over whole wheat pasta or zucchini noodles.

Notes

  • You can substitute ground chicken for turkey.
  • For extra flavor, add a splash of red wine when cooking the vegetables.
  • Freeze leftovers for up to 3 months.
