Description
A healthy and flavorful turkey bolognese made in the crockpot for an easy, hands-off meal.
Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 1/4 cup tomato paste
- 1/2 cup low-sodium chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bay leaf
Instructions
- Brown the ground turkey in a skillet over medium heat until fully cooked.
- Add the onion, carrots, celery, and garlic to the skillet. Cook for 5 minutes until softened.
- Transfer the turkey and vegetables to the crockpot.
- Add the crushed tomatoes, tomato paste, chicken broth, oregano, basil, salt, pepper, and bay leaf. Stir well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the bay leaf before serving.
- Serve over whole wheat pasta or zucchini noodles.
Notes
- You can substitute ground chicken for turkey.
- For extra flavor, add a splash of red wine when cooking the vegetables.
- Freeze leftovers for up to 3 months.
