A simple and healthy crockpot turkey taco meat recipe perfect for meal prep.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 packet taco seasoning
- 1 cup low-sodium chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
Instructions
- Heat olive oil in a pan and sauté onion, garlic, and bell pepper until soft.
- Add ground turkey and cook until browned.
- Transfer mixture to crockpot.
- Add taco seasoning and chicken broth.
- Cook on low for 4 hours.
- Add black beans and corn in the last 30 minutes.
- Serve with tortillas or over rice.
Notes
- Store leftovers in airtight containers for up to 5 days.
- Freeze for longer storage.
