A simple and healthy crockpot turkey taco meat recipe perfect for meal prep.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 packet taco seasoning
  • 1 cup low-sodium chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels


Instructions

  1. Heat olive oil in a pan and sauté onion, garlic, and bell pepper until soft.
  2. Add ground turkey and cook until browned.
  3. Transfer mixture to crockpot.
  4. Add taco seasoning and chicken broth.
  5. Cook on low for 4 hours.
  6. Add black beans and corn in the last 30 minutes.
  7. Serve with tortillas or over rice.
