A quick, crunchy vegan carrot salad perfect for social media sharing. Packed with fresh ingredients and bold flavors.


Ingredients

  • 4 large carrots (shredded)
  • 1/4 cup chopped cilantro
  • 2 tbsp toasted sesame seeds
  • 1 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Shred carrots using a grater or food processor
  2. Combine carrots with cilantro and sesame seeds in a bowl
  3. Whisk together olive oil, rice vinegar, maple syrup, salt and pepper
  4. Pour dressing over carrot mixture and toss well
  5. Chill for 15 minutes before serving

Notes

  • For extra crunch, add sunflower seeds
  • Adjust sweetness with more or less maple syrup
