A quick, crunchy vegan carrot salad perfect for social media sharing. Packed with fresh ingredients and bold flavors.
Ingredients
- 4 large carrots (shredded)
- 1/4 cup chopped cilantro
- 2 tbsp toasted sesame seeds
- 1 tbsp olive oil
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Shred carrots using a grater or food processor
- Combine carrots with cilantro and sesame seeds in a bowl
- Whisk together olive oil, rice vinegar, maple syrup, salt and pepper
- Pour dressing over carrot mixture and toss well
- Chill for 15 minutes before serving
Notes
- For extra crunch, add sunflower seeds
- Adjust sweetness with more or less maple syrup
- Best eaten fresh but keeps for 2 days refrigerated
