A healthy twist on a classic dish, this creamy chicken parmesan soup is packed with flavor and nutrients. Perfect for a cozy meal.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups low-sodium chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 cup whole wheat pasta (or gluten-free pasta)
- 1/4 cup grated parmesan cheese
- 1/2 cup plain Greek yogurt
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken breasts and cook until browned, about 4-5 minutes per side. Remove and set aside.
- In the same pot, sauté onion, garlic, carrot, and celery for 5 minutes.
- Pour in chicken broth and diced tomatoes. Add oregano, basil, and black pepper.
- Shred the cooked chicken and return it to the pot. Simmer for 15 minutes.
- Add pasta and cook until al dente, about 8-10 minutes.
- Stir in parmesan cheese and Greek yogurt until smooth.
- Garnish with fresh basil before serving.
Notes
- Use gluten-free pasta if needed.
- For extra creaminess, add more Greek yogurt.
- Store leftovers in an airtight container for up to 3 days.
