Ingredients
- 4 large potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- 2 lemons, juiced
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup vegetable broth
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Toss potato wedges in the mixture until well coated.
- Arrange potatoes in a single layer on a baking dish.
- Pour vegetable broth over the potatoes.
- Bake for 40-45 minutes, flipping halfway, until golden and crispy.
