Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 can (15 oz) green beans, drained
- 1 cup shredded cheddar cheese
- 1 cup uncooked rice
- 2 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, brown ground beef with onion and garlic. Drain excess fat.
- Add diced tomatoes, corn, green beans, salt, pepper, and paprika. Stir well.
- Mix in uncooked rice and beef broth.
- Transfer mixture to a greased casserole dish.
- Top with shredded cheddar cheese.
- Bake for 30-35 minutes, or until rice is tender.
- Let it cool for 5 minutes before serving.

- Substitute ground turkey for a leaner option.
