Description
A simple and nutritious slow cooker meal with chicken, rice, and beans.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 diced bell pepper
- 1 diced onion
- 2 cups chicken broth
- 1 tbsp taco seasoning
Instructions
- Place chicken breasts in the crockpot.
- Add rice, black beans, corn, tomatoes, bell pepper, and onion.
- Pour in chicken broth and sprinkle taco seasoning over everything.
- Cover and cook on low for 6 hours.
- Shred chicken with forks and mix well before serving.
Notes
- You can use white rice instead of brown.
- Add hot sauce or salsa for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
