Description

A simple and nutritious slow cooker meal with chicken, rice, and beans.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 diced bell pepper
  • 1 diced onion
  • 2 cups chicken broth
  • 1 tbsp taco seasoning


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add rice, black beans, corn, tomatoes, bell pepper, and onion.
  3. Pour in chicken broth and sprinkle taco seasoning over everything.
  4. Cover and cook on low for 6 hours.
  5. Shred chicken with forks and mix well before serving.
