Description
A healthy and easy version of golumpki, this stuffed cabbage soup is perfect for meal prep.
Ingredients
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 head of cabbage, chopped
- 1 can diced tomatoes (28 oz)
- 4 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked rice
Instructions
- In a large pot, brown the ground turkey over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Stir in the chopped cabbage and cook until wilted.
- Add diced tomatoes, chicken broth, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in the cooked rice before serving.

- This soup can be stored in the fridge for up to 4 days.
- It freezes well for up to 3 months.
