Healthy and easy meatloaf muffins perfect for meal prep. These muffins are quick to make and packed with flavor.
Ingredients
- 1 lb lean ground turkey or beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 tsp garlic powder
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup ketchup
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix ground meat, breadcrumbs, egg, milk, onion, bell pepper, garlic powder, Worcestershire sauce, salt, and pepper.
- Scoop mixture into a greased muffin tin, filling each cup evenly.
- Top each muffin with a small amount of ketchup.
- Bake for 20-25 minutes or until cooked through.
- Let cool slightly before serving or storing.

- Store in an airtight container in the fridge for up to 4 days.
