Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey or chicken
  • 1 bag coleslaw mix (14 oz)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce (low sodium)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • 1 tsp sriracha (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey or chicken and cook until browned, breaking it apart as it cooks.
  3. Add garlic and ginger, stir for 30 seconds until fragrant.
  4. Add coleslaw mix, soy sauce, rice vinegar, and sesame oil. Stir-fry for 2-3 minutes until cabbage softens.
  5. Remove from heat and top with green onions and sriracha if desired.
