Description
A quick and healthy twist on traditional egg rolls, packed with fresh vegetables and lean protein.
Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 cup sliced green onions
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- 2 eggs, beaten
- 1 tbsp sesame seeds
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook until browned, about 5 minutes.
- Add cabbage, carrots, green onions, garlic, and ginger. Cook for 3 minutes.
- Stir in soy sauce, rice vinegar, sesame oil, and red pepper flakes.
- Push the mixture to one side of the skillet and pour beaten eggs into the empty space.
- Scramble the eggs until fully cooked, then mix into the vegetable mixture.
- Garnish with sesame seeds and serve hot.
Notes
- Swap turkey for chicken or tofu if preferred.
- Add more vegetables like bell peppers or mushrooms.
- Store leftovers in an airtight container for up to 3 days.
