Description

A hearty and healthy twist on classic French onion soup with tender short ribs and melted Gruyère cheese.


Ingredients

  • 2 lbs beef short ribs
  • 4 large yellow onions, thinly sliced
  • 4 cups beef broth (low sodium)
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup shredded Gruyère cheese
  • 4 slices whole grain bread


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and cook until caramelized (about 30 minutes).
  3. Season short ribs with salt and pepper, then add to the pot.
  4. Brown ribs on all sides (5 minutes per side).
  5. Add broth, water, thyme, and bay leaf.
  6. Simmer covered for 2.5 hours until ribs are tender.
  7. Remove ribs and shred meat, discarding bones.
  8. Return meat to the pot and discard thyme sprigs and bay leaf.
  9. Toast bread slices.
  10. Ladle soup into bowls, top with toasted bread and Gruyère.
  11. Broil for 2 minutes until cheese melts.
