Description
A hearty and healthy twist on classic French onion soup with tender short ribs and melted Gruyère cheese.
Ingredients
- 2 lbs beef short ribs
- 4 large yellow onions, thinly sliced
- 4 cups beef broth (low sodium)
- 2 cups water
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 cup shredded Gruyère cheese
- 4 slices whole grain bread
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook until caramelized (about 30 minutes).
- Season short ribs with salt and pepper, then add to the pot.
- Brown ribs on all sides (5 minutes per side).
- Add broth, water, thyme, and bay leaf.
- Simmer covered for 2.5 hours until ribs are tender.
- Remove ribs and shred meat, discarding bones.
- Return meat to the pot and discard thyme sprigs and bay leaf.
- Toast bread slices.
- Ladle soup into bowls, top with toasted bread and Gruyère.
- Broil for 2 minutes until cheese melts.
